Mussels, Kale and Roasted Tomato Salad

Serves 4

A naturally iron enhanced recipe! 

Imperial Ingredients
2 cans (85 g)  Ocean’s Whole Smoked Mussels, drained 
1/4 cup  onion, finely chopped 
1/2 cup  roasted tomatoes, with juice & oil (store bought) 
2 cups  kale, thinly sliced 
1/2 tsp  garlic powder 

Salt & pepper to taste

What to Do

  1. In a pan, over medium-high heat sauté the onion, roasted tomatoes and garlic powder, for about 2 minutes.
  2. Add mussels, and kale and sauté for another 30 seconds. Pull to the side, season to taste and serve.

Chef’s suggestion:

Use Swiss chard or arugula if you’re not a fan of kale.
