Mussels, Kale and Roasted Tomato Salad
A naturally iron enhanced recipe!
|Imperial ||Ingredients |
|2 cans (85 g) ||Ocean’s Whole Smoked Mussels, drained |
|1/4 cup ||onion, finely chopped |
|1/2 cup ||roasted tomatoes, with juice & oil (store bought) |
|2 cups ||kale, thinly sliced |
|1/2 tsp ||garlic powder |
|Salt & pepper to taste |
What to Do
- In a pan, over medium-high heat sauté the onion, roasted tomatoes and garlic powder, for about 2 minutes.
- Add mussels, and kale and sauté for another 30 seconds. Pull to the side, season to taste and serve.
Use Swiss chard or arugula if you’re not a fan of kale.
