Clam Stir Fry

Serves 2

A great looking, amazing tasting healthy option to a stir fry.

Imperial Ingredients
1 can (142 g)  Ocean’s Baby Clams, drained 
2 Tbsp  extra virgin olive oil 
½ cup  finely diced onions 
½ cup 
sliced carrots 
½ cup  finely chopped celery 
½ cup  frozen corn 
2 Tbsp  finely chopped fresh basil 

salt and pepper to taste
2 cups  cooked quinoa (follow directions on package)

What to Do

  1. In a large non-stick fry pan over med/high heat add olive oil and heat til it is shiny and coats the pan add onions, carrots, celery and corn sauté for 2-3 minutes
  2. Add Clams and basil sauté for 2-3 minutes and season with salt and pepper
  3. Serve over warm Quinoa

Chef’s suggestion:

For a dramatic visual on your plate try using black rice.
