Chunky Tuna and Cucumber Salad

Ripe tomatoes

Seedless cucumber
60 ml 1/4 cup
Red onions, diced
150 ml 2/3 cup
Bottle Greek dressing
   
Salt and pepper to taste
2 cans 2 cans
Ocean's Solid Albacore Tuna (184g or 170g) drained
125g
1/2 cup
Feta cheese, crumbled
250g 1 cup Black Greek olives
15 ml 1 tbsp Capers, optional
1/2 1/2 Lemon, cut into wedges

Chef's Tips

Great as a side dish to many main course items.
Excellent as garnish for regular tossed salad to dress it up.

Directions

  1. Cut tomatoes into 1 inch (2.5cm) chunks. Cut cucumbers into similar sized pieces.
  2. Toss tomatoes, cucumbers and onion with enough dressing to coat lightly. Adjust seasonings if necessary. Divide onto rimmed plates.
  3. Break tuna into chunks.
  4. Sprinkle feta and tuna over salad. Top with olives and capers (if using). Garnish with a lemon wedge.
