Chunky Tuna and Cucumber Salad
Serves 4 - 6
|Ripe tomatoes |
|1 ||1 |
|Seedless cucumber |
|60 ml ||1/4 cup |
|Red onions, diced |
|150 ml ||2/3 cup |
|Bottle Greek dressing |
| || |
|Salt and pepper to taste |
|2 cans ||2 cans |
|Ocean's Solid Albacore Tuna (184g or 170g) drained |
|1/2 cup |
|Feta cheese, crumbled |
|250g ||1 cup ||Black Greek olives |
|15 ml ||1 tbsp ||Capers, optional |
|1/2 ||1/2 ||Lemon, cut into wedges |
Great as a side dish to many main course items.
Excellent as garnish for regular tossed salad to dress it up.
- Cut tomatoes into 1 inch (2.5cm) chunks. Cut cucumbers into similar sized pieces.
- Toss tomatoes, cucumbers and onion with enough dressing to coat lightly. Adjust seasonings if necessary. Divide onto rimmed plates.
- Break tuna into chunks.
- Sprinkle feta and tuna over salad. Top with olives and capers (if using). Garnish with a lemon wedge.
