Tuna Super Salad

As an appetizer (serves 4) or main course (serves 2) this flavour power is, quite frankly, super!

Ingredients
1 can (100 g) Gold Seal No Drain Solid White Tuna
4 cups spring mix salad
1/2 cup
cooked tricolored quinoa
1/4 cup
blueberries
1/4 cup raspberries
1/2 cup
natural almonds (optional)
2 tbsp
extra virgin olive oil
2 tbsp
aged balsamic vinegar
  • Chef's Tips

    Adding ¼ cup of fresh chopped basil gives this salad another flavour dimension.  

    Directions

    1. Place 2 cups of spring mix on each plate and sprinkle a ¼ cup of quinoa over the salad, add berries, flake tuna over the salad and garnish with almonds.
    2. Drizzle olive oil and balsamic vinegar over the salad.
