Tuna and Watermelon Summer Salsa

A juicy, unique take on salsa best enjoyed on a sunny backyard patio!

Ingredients
2 cans (85 g) Gold Seal No Drain Flaked White tuna
2 cups diced watermelon
1/2 cup
sweet peas
1 cup
finely diced cucumber
1/4 cup
finely chopped mint
1/4 cup
finely chopped basil
2 tbsp
extra virgin olive oil

juice of one fresh lime

Fresh baby arugula for garnish
  • Chef's Tips

    Watermelon is hydrating and an antioxidant.  This salsa is also wonderful on its own, without the arugula.

    Directions

    1. In large mixing bowl combine all ingredients except arugula.
    2. Stack the arugula on the centre of a plate and place salsa over.
