Salmon, Tomato, Chickpea and Feta Salad
Great recipe for protein lovers!
|2 cans (125 g) ||Gold Seal Skinless Boneless Sockeye salmon, drained |
|1/2 cup |
|crumbled feta cheese |
|1/4 tsp ||red chili flakes |
|2 tbsp ||extra virgin olive oil |
|4 cups ||grape tomatoes sliced in half |
|2 cups ||assorted cherry tomatoes cut in half |
|1-15oz can ||low-salt chickpeas, rinsed, drained and patted dry |
|1 tbsp ||white balsamic vinegar |
| ||salt and pepper to taste |
If you are not a fan of Feta cheese use aged cheddar.
- In a small bowl combine feta cheese, red pepper flakes, olive oil. Set aside.
- Combine tomatoes and chickpeas on a platter. Flake salmon over mixture and crumble feta over entire salad.
- Drizzle olive oil and balsamic over salad and season with salt and pepper to taste.
