Salmon Couscous Salad

A refreshing, easy-to-prepare salad, perfect for a relaxing summer patio dinner.

Ingredients
2 cans (125 g each) Gold Seal Skinless Boneless Sockeye Salmon, drained
3 tsp chopped fresh mint
2 tsp chopped fresh basil
1/3 cup chopped fresh parsley

juice & zest of 1 lemon
1/2 cup finely diced celery
1/2 cup finely diced red peppers
1/2 cup finely diced cucumber
1/4 cup chopped green onions
 1 pkg (200 g) cooked couscous (follow directions on package)
 1/2 cup olive oil
  freshly cracked pepper, to taste
  6 radicchio leaves (optional)
  • Chef's Tips

    Add halved cherry tomatoes for extra color. Or serve with a side of grilled summer veggies.
    Can be made a day ahead and refrigerated.

    Directions

    1. Combine all ingredients (except radicchio) in a large mixing bowl and mix well.
    2. Serve directly on chilled plates, or scooped into radicchio leaves.
