Protein Power Salmon Kofta

Ingredients
1 (170g) can Gold Seal Skinless Boneless Sockeye Salmon
1 egg beaten
1 cup canned lentils drained
½ cup cottage cheese
½ cup oatmeal
½ cup
chia seeds
4
seedless dates
  juice of half a lemon
 1 tsp baking soda
 1 tsp dijon mustard
 1 tsp onion powder
 1 tsp smoked paprika
 ½ tsp cumin
   Salt and pepper to taste

Chipotle Yogurt Dip

Ingredients
1 cup greek yoghurt
1 tsp chili powder
½ tbsp paprika
½ tbsp garlic powder
¼ tsp chipotle powder

juice of half a lemon
  salt and pepper to taste
  Combine all ingredients together, mix well 
  • Directions

    1. Preheat oven to 400F. Place all ingredients in a food processor, puree till smooth about 1 minute.
    2. Place mixture in the refrigerator for 30 - 40 minutes.
    3. Spoon on a parchment lined baking sheet.
    4. Bake for 10 -12 minutes until lightly brown.
    5. Serve with Chipotle Yoghurt Dip.
